Request for Budget Amendment Requesting the transfer of $5482 from line item 572-107 (Part-time) and placing it in line item 572-103 (Cooks). The reason for the transfer is to offer a new cook the salary of $25,048, which is a Grade 17 Step 1. The new cook is an executive chef. He has experience in food ordering, creating menus, calculating serving portions vs. food waste, efficient time management, and general kitchen experience. He has streamlined the kitchen at this point to make it more efficient. He is in the process of conducting price comparisons with various food vendors. He is familiar with food vendor salesmen and understands food prices and percentage discounts. He also has the ability to calculate food cost per portions. His experience and abilities makes him a valuable asset to the facility. He has the ability to save the facility money with more effective food purchases and preparations. KERR COUNTY JUVENII.E FACILITY Kitchen Manager Job Expectations JOB SUMMARY: The kitchen manager is responsible for the management of the kitchen operations. Must perform duties on a professional level with minimal supervision. The kitchen manager is under the direct supervision of the Assistant Facility Administrator. DUTIES INCLUDE: • Oversee daily operations of the kitchen • Quality food preparation for residents • Prepare and maintain schedule for kitchen staff • Menu preparation to ensure compliance with specified standards and recommendations aligned with the National School Lunch Program • Ordering food and kitchen supplies to insure proper nutritional guidelines aze met and cost effective • Maintain weekly inventory of food stocks • Review annual budget guidelines and adhere to cost averages. Make necessary suggestions to any changes, which may cause any overages. • Maintain concise daily records of meal plans, portions served, number of residents served, and keep abreast of any modifications that pertain to set guidelines. Follow all guidelines established by the Assistant Facility Administrator MINIMUM QUALIFICATIONS Five (5) years experience in food service preparation within a residential, institutional or educational setting. Any educational or experiential qualifications to be considered as equivalent, in lieu of the above minimums, require prior approval from the Facility Administrator. ADDITIONAL REQUIItED EXPERIENCE Must be able to prepare cost-efficient meals and menus. Should have knowledge of the National School Lunch Program dietary requirements and have excellent processing and communication skills. Must maintain a Food Service Manager Certification from the Texas Department of Health. Must be at least 21 years of age and have a high school diploma or GED.
